  • For the lobster, bring a saucepan of salted water to the boil. Remove from heat and add lobster tails, cover with a tight fitting lid. Sit lobster tails in the water for 8 minutes, then drain and set aside until needed.
  • For the butter, heat water until hot, then using a stick blender, add xanthan gum to water and blend until combined. Add butter and blend until combined and emulsified. Season to taste.
  • Remove shells from tails and place in a heatproof bowl set over a saucepan of barely simmering water. Toss tails in the butter mixture to coat, and heat until warmed through.
  • To assemble, slice lobster and place on plates, then drizzle with butter sauce. Combine leaves in a bowl and garnish lobster with salad mixture.
