- Tear the kale leaves and place in a bowl. Add a drizzle of olive oil and a pinch of salt, massage the kale.
- Add the strawberries, tomatoes, bocconcini and mint, toss to combine.
- Add the orange zest and juice. Mix and season.
- Place the salad in a bowl and scatter over almonds to serve.
