  1. Tear the kale leaves and place in a bowl. Add a drizzle of olive oil and a pinch of salt, massage the kale.
  2. Add the strawberries, tomatoes, bocconcini and mint, toss to combine.
  3. Add the orange zest and juice. Mix and season.
  4. Place the salad in a bowl and scatter over almonds to serve.
