- For the Garlic and Ginger Olive Oil, place oil, garlic and salt into a pan over medium heat.
- Cook until garlic just starts to become golden. Strain through a fine sieve into a small pan and reserve the garlic.
- Add ginger and sugar to the garlic oil and cook ginger until golden brown.
- Strain through a fine sieve into a bowl and reserve the ginger and oil separately.
- For the Soy Sauce Fish, place oil into a frypan over medium heat. Add onion and cook until soft. Add the garlic and fry until the onion and garlic are slightly golden. Add the soy sauce, oyster sauce, sugar, rice wine vinegar, water and wine and cook for approximately 3 minutes. Remove from the heat and set aside to cool.
- Dry the fish with a paper towel. Place onto a plate and into a bamboo steamer and season with salt and pepper. Cover with the ginger then pour the cooled sauce over the fish and steam for approximately 8 minutes.
- Remove the fish from the steamer and sprinkle with spring onion. Heat the garlic and ginger oil in a small saucepan until it just starts to smoke, then immediately pour oil over the fish.
- Squeeze lime juice over the top and garnish with sliced chilli and coriander. Serve with Jasmine rice on the side and garnish with fried garlic.
