Roasted Fig with Prosciutto and Goats Cheese

  • Preheat oven to 200C.
  • For the figs, slice in half lengthways, sprinkle with raw sugar and wrap each half with a slice of prosciutto. Place figs into oven on a baking tray and roast until figs are soft and caramelised, and the prosciutto is crispy, about 10 minutes.
  • For the goats cheese foam, whisk the goats cheese and cream together until smooth. Pass mixture through a sieve. Pour mixture into a siphon canister, charge with two charges and chill until needed.
  • For the salad, mix the balsamic vinegar and oil together in a medium bowl. Season with salt and pepper. Add rocket and toss to coat lightly.
  • To serve, divide rocket between plates, reserving excess dressing. Top with figs and add goats cheese foam. Drizzle excess dressing over the top.
