- For the Dumplings, place sugar and butter into a mixing bowl and combine to a creamy paste. Add flour, milk and vanilla essence and mix well to a smooth paste. Set aside.
- For the Caramel Sauce, place brown sugar, water and butter into a large wide microwave safe casserole dish and stir to combine. Microwave on high, uncovered, for 6-8 minutes. Whisk well to combine.
- Using a tablespoon, spoon in 8 portions of dough into the caramel sauce and spoon the sauce over the dough. Return to the microwave and cook on medium, covered, for 4-6 minutes. Remove from the microwave and set aside for 5 minutes.
- For the Irish Liqueur Cream, combine the cream and liqueur in the bowl of a stand mixer fitted with a whisk attachment. Whisk to soft peaks.
- To serve, spoon 1-2 dumplings and a generous amount of caramel sauce into serving bowls. Add some Irish Liqueur Cream and finish with fresh raspberries.
