Beef Kilawin with Bone Marrow Butter

- Preheat oven to 200oC. Preheat a grill pan or BBQ.
- For the Roasted Bone Marrow, place marrow into a shallow tray. Drizzle with olive oil and season with salt and pepper.
- Bake in the oven for 20 minutes, until marrow is soft and lightly golden on the surface. Remove from the oven and set aside.
- For the Seared Beef, once grill pan or BBQ is smoking hot, season beef with salt and pepper. Cook the beef until well browned and charred, about 2 minutes on each side.
- Remove from the heat and set aside to rest. Once rested, dice the beef into 1 cm cubes and place in a bowl. When ready to serve, add the herbs and vinegar and toss together gently. Set aside.
- For the Spiced Butter, place onion, ginger, galangal and garlic in a small food processor and blend to a paste.
- Place oil into a medium frypan over medium heat. Once hot, add paste and cook until fragrant and browned. Add soy sauce and seaweed paste and mix well. Reduce the heat to low and add butter. Stir until melted and combined. Remove from the heat.
- To serve, place roasted marrow onto plates. Top with seared beef and pour warm spiced butter sauce over the top.
