- Bring a large pot of water to the boil and preheat the oven to 180C fan forced.
- Without peeling, cut potatoes into 2.5cm strips.
- Blanch the potatoes for 7 minutes in the boiling water, then drain well.
- Spread the potatoes out onto a roasting pan and dry roast (with nothing added) for 25minutes until the potatoes are dry on the surface. Turn the oven up to 200C.
- Whilst the oven heats up scrape the sides of the chips with a fork – this will help them have a very crunchy exterior.
- Drizzle the chips with oil and dot butter over the tray. Bake for 20 minutes turning potatoes to prevent them from burning, until golden brown and crisp. Season generously with sea salt.
