Tuna Poke with Roasted Macadamia

- Place macadamias in a fry pan on medium heat and brown, tossing to prevent burning. When golden brown, remove from heat and allow to cool slightly.
- Chop finely and set aside in a small serving bowl.
- Remove the skin and bloodline of tuna and cut into 15mm sized cubes.
- Prepare the spring onions, shallots and samphire and gently toss through the tuna. Set aside in the fridge.
- Chop the nori sheet into 1cm squares and set aside.
- For the Sauce, combine the ingredients in a small serving jug.
- To serve, add nori squares to the tuna and arrange in a serving bowl. Serve the tuna with the sauce and macadamias.
