Tuna Poke with Roasted Macadamia

  1. Place macadamias in a fry pan on medium heat and brown, tossing to prevent burning. When golden brown, remove from heat and allow to cool slightly.
  2. Chop finely and set aside in a small serving bowl.
  3. Remove the skin and bloodline of tuna and cut into 15mm sized cubes.
  4. Prepare the spring onions, shallots and samphire and gently toss through the tuna. Set aside in the fridge.
  5. Chop the nori sheet into 1cm squares and set aside.
  6. For the Sauce, combine the ingredients in a small serving jug.
  7. To serve, add nori squares to the tuna and arrange in a serving bowl. Serve the tuna with the sauce and macadamias.
