Silken Tofu with Fried Egg and Yummy Sauce

- To prepare the tofu, remove it from the packaging, draining any excess liquid. Trim the sides and remove a thin layer off the top of the block to make it uniform in appearance, if desired. Cut into 4 equal portions and place onto serving plates.
- For the Yummy Sauce, heat the oil in a small saucepan. Place the ginger, garlic and shallot into a small food processor. Add the white portion of the spring onion, coriander stems and one chilli. Process until finely chopped and well combined. Transfer to a small heat proof bowl.
- Finely slice the second red chilli and add to the bowl. Add sugar, sesame seeds, salt and white pepper. When the oil is very hot (but not at smoking point), pour over the bowl of prepared ingredients.
- Stir and season with rice wine vinegar, soy sauce, mirin and sesame seeds. Set aside.
- For the Fried Eggs, heat the oil in a large frying pan over medium heat. When the oil is very hot, crack in the eggs. Season with salt and carefully agitate the pan so that the hot oil cooks the top side of the egg white. Avoid cooking the yolk. When the edges of the egg are crisp and the white is cooked through, remove from the pan and pat away excess oil with paper towel.
- To serve, place the fried eggs on top of the tofu and drizzle generously with the sauce. Spoon extra sauce in the bowl around the tofu. Garnish plates with spring onion, coriander and toasted sesame seeds.
