- Preheat oven to 180°C.
- Heat a deep-fryer to 180°C.
- To make the Loukamade Dough, combine the ingredients in a large bowl and mix together with whisk. Allow to sit for 10 minutes, covered in a warm spot
- Meanwhile, prepare the Mahlepi Glaze. Over a medium-low heat add the mahlepi to a frypan to toast lightly. Cook for ?? minutes until ??. Remove and allow to cool.
- Place icing sugar and water to a bowl and mix together to make a glaze.
- Using a spice blender, grind the mahlepi into a powder, add to the glaze with a pinch of salt.
- For the Syrup, to a small saucepan on a very low heat add honey, thyme, and orange and lemon zest. Allow to cook for 15 minutes whilst infusing. Set aside in a serving jug.
- Place pistachios on a baking tray and roast for 10 minutes. Allow to cool and then crush. Set aside in a serving bowl.
- Transfer the loukoumades batter to a piping bang with a 1cm round piping nozzle. Wet your pointer finger and thumb and pinch off balls of the batter into the deep fryer. Fry for ?? minutes, turning constantly until golden brown. Drain on a paper towel
- To serve, drizzle half the loukoumades with the syrup and sprinkle with pistachios. Drizzzle the remaining loukamades with the mahlepi glaze.
