- Heat oil in deep fryer to 180C.
- For the Toasted Rice Seasoning, place all ingredients into a bowl and mix until well combined. Set aside.
- For the Nam Jim, place all ingredients into a small bowl and mix well until sugar has dissolved. Set aside.
- For the Fried Soft Shell Crab, place egg whites in a medium bowl and whisk until foamy. Dry the crabs with paper towel and toss with the egg whites until thoroughly coated.
- In another bowl, whisk together flour, cornflour, salt, pepper, cayenne, coriander and turmeric.
- Dredge 2 crabs at a time in the flour mixture and place into the hot oil. Fry, turning, until golden brown and crisp, about 4 minutes.
- Remove from the oil and place onto a tray lined with paper towel. Season generously with Toasted Rice Seasoning while hot.
- To serve, toss cherry tomatoes with 2 tablespoons Nam Jim and grapeseed oil. Place onto the base of a large platter. Top with Fried Soft Shell Crab and fresh herbs. Serve immediately with remaining Nam Jim on side.
