Johnny's Marshmallow Cones

  • Combine the gelatine with 80ml cold water in a bowl and set aside for 5 minutes until the gelatine has absorbed the water.
  • Heat the sugar and 80ml water in a small saucepan over medium heat until sugar dissolves. Add the gelatine and stir until dissolved. Pour the mixture into the bowl of a stand mixer and set aside for 15 minutes.
  • Melt the chocolate in the microwave on high in 30 seconds bursts, stirring until smooth. Drizzle some chocolate into the bottom of each cone and sprinkle in a layer of popping candy.
  • Turn the stand mixer onto medium-high and whisk the marshmallow mixture until stiff peaks form. Transfer to a piping bag fitted with a .5cm star nozzle.
  • Pipe marshmallow into cones allowing a 5cm peak above the rim of the cone. Decorate with melted chocolate, peanuts nuts and popping candy.
