Cauliflower Tabbouleh

  • Using a box grater, coarsely grate the cauliflower and broccoli
  • Heat the oil in a large frying pan over medium heat. Add half the cauliflower and broccoli. Cook, stirring occasionally, for 5 minutes, or until tender and fragrant. Transfer to a large bowl. Cool slightly.
  • Meanwhile, to make dressing, combine all ingredients in a jug and whisk to combine. Season with salt and pepper. Alternatively, combine all ingredients in a jar, seal with lid and shake to combine.
  • Add the remaining ingredients to the cauliflower and broccoli and toss to combine.
  • Drizzle with the dressing and toss well. Serve.
