  • Heat oil in wok over high heat until just starting to smoke. Add egg and break up using a whisk. Cook until egg is slightly golden on edges then remove and set aside, leaving oil in wok.
  • Add shallots and garlic to wok and cook for a minute until translucent. Add sausage, carrot and snake beans and cook for 2-3 minutes until lightly golden. Add rice wine and cook for ten seconds then toss through cooked rice and reserved egg. Stir through sauces until well combined and season with salt, to taste.
  • Serve with spring onions and chilli as garnish.
