  • For the Fried Oyster Mushrooms, add oil to medium saucepan to a depth of 4cm. Heat on a medium heat to 180°C. Prepare wire rack with two sheets of paper towels.
  • Create the wet mix by combining soy milk and apple cider vinegar together in a medium mixing bowl. Allow to sit for at least 5 minutes.
  • Create the dry mix by combining all dry ingredients and spices, except oyster mushrooms, in a medium bowl and whisk to evenly combine.
  • Add 5 tablespoons of the wet mix into the dry mix to create lumps. This creates the fried chicken texture.
  • Break oyster mushrooms into palm-sized pieces, maintaining 4-5 mushroom per piece.
  • One by one, dip the mushroom into the dry mix, then the wet mix and then dry mix again, ensuring every surface has been coated each time. Carefully drop into hot oil and fry until golden brown, about 4-5 minutes.
  • Remove from oil with a slotted spoon, shaking excess oil and transfer to prepared wire rack. Repeat until all mushrooms are cooked. Allow to cool for at least 5 minutes, then set aside for serving.
  • For the Hot Maple Syrup, combine all ingredients in a small saucepan over a low heat. Once bubbles start appearing, stir and remove from heat. Allow to sit for 10 minutes. Transfer to a pouring jug and set aside for plating.
  • To cook the Buttermilk Waffles, pre-heat waffle iron for at least 5 minutes.
  • Combine soy milk and apple cider vinegar in a small bowl. Allow to sit for 5 minutes. Sift flour, baking powder, sugar and salt in a large bowl.
  • Add soy milk mixture, butter, and oil to dry ingredients. Slowly stir to combine until the mixture is a thick batter with no dry clumps.
  • Spray waffle iron with vegetable oil spray. Spoon a ladle of batter onto each waffle mould and close the lid. Cook for 5-6 minutes or until steam coming from waffle iron reduces.
  • Remove waffles from waffle iron and transfer to a wire rack. Allow to cool for 5 minutes. Repeat to make 4 waffles. Set aside in a warm, dry place until ready to serve.
  • To serve, place one waffle in the centre of the plate. Arrange 2-3 pieces of fried oyster mushroom over waffle. Stand second waffle against fried mushrooms on an angle.
  • Scatter 4-5 pea sprouts around plate. Finish by pouring a generous serving of hot maple syrup over waffles.
