Bacon and Corn Croquettes with Salsa Brava and Mojo Verde

  • For the Bacon and Corn Croquettes, heat a medium frypan over medium high heat. Add bacon and sauté until golden. Remove from the pan, drain on paper towel and place into a bowl with the corn kernels.
  • Place butter into a medium saucepan over medium high heat. Once melted, add flour and stir, until the mixture starts to foam. Add a splash of milk and stir until it comes together. Add a little more milk and repeat until all of the milk has been added. Add the cheese, salt and pepper and stir until combined. Stir in the bacon and corn then spread into a tray and set in the freezer until firm.
  • Heat oil deep fryer to 180°C.
  • Using damp hands, make walnut sized balls of croquette mixture. Roll in the breadcrumbs, into the beaten egg, and back into the breadcrumbs, ensuring mixture is evenly and fully coated. Deep fry croquettes, in batches, until golden brown, about 3-4 minutes. Remove from the oil and immediately sprinkle with salt.
  • For the Mayonnaise, carefully crack the egg into the canister of a stick blender then add the remaining ingredients. Position the blade cage of the stick blender on the base of the canister. Blend until the mixture starts to emulsify and turn white. Continue to blend and slowly draw the blender upwards through the ingredients to a achieve a thick mayo. Season with salt, to taste. Set aside in the fridge.
  • For the Salsa Brava, place a non-stick frypan over medium heat. Add olive oil and sauté the onion, garlic and half the chillies until fragrant and translucent. Add the paprika and stir until fragrant. Add tomatoes, vinegar and sugar and cook until the mixture is rich and quite reduced. Transfer to a blender along with the remaining chillies and salt. Process until smooth. Set aside to cool then stir in mayonnaise. Set aside.
  • For the Mojo Verde, place ingredients into a food processor and pulse to a chunky consistency. Add more salt or lime juice to taste.
  • To serve, spoon sauces and remaining mayo into serving bowls to serve alongside the croquettes. Garnish with lime wedges.
