- Divide the ginger, garlic, thyme, chives, peppercorns, olive oil, wine and butter between the two jars. Season the fish and place in the jars along with the asparagus. Squeeze a quarter of the lemon into each jar and seal tightly.
- Bring a deep saucepan of water to the boil. Place the jars in the saucepan, the water should reach three quarters up the side of the jar. Reduce the heat to a simmer and cook for 10−15 minutes until the fish is almost cooked through (the fish will continue to cook until the lid is removed). Remove the jars from the water and allow to cool for 1 minute before opening.
- For the salad, divide the risoni, radicchio, radish and edamame between plates. Gently remove the fish and asparagus from the jar and arrange on top of the salad. Spoon the sauce over the fish, season to taste and serve with lemon wedges.

A quick and simple recipe to prepare, fish in a jar is a self-saucing, all-in-one dish designed to maximise taste by trapping all the flavours and aromas inside. Choose the freshest white fish that you can get your hands on as this is the star of the dish. You’ll need 2 x 500ml jars with watertight lids. Make sure the jars are clean before you begin.
