  • Season prawns with salt and set to one side to drain on a plate lined with paper towel.
  • Heat oil in a non-stick frying pan over a medium-high heat. Add garlic, chilli and basil and sauté until onion is soft and translucent. Add prawns and cook for 1 – 2 minutes on each side. Sprinkle breadcrumbs over prawns and stir to coat.
  • To serve, spoon crumb mixture onto a serving plate and arrange prawns on top, drizzle with olive oil, serve with lemon wedges and garnish with basil leaves.
