Charred Lamb & Radicchio with Mozzarella

  1. Heat a chargrill plate over a high heat.
  2. Remove and reserve outer leaves of radicchio. Cut remining into thick wedges. Add wedges to chargrill plate and drizzle with 1 tablespoon olive oil. Cook, turning occasionally, for about 4 minutes, or until charred. Remove and slice.
  3. Meanwhile, to make dressing, cut cherry tomatoes in half. Squeeze seeds into a bowl. Add remaining ingredients and whisk well.
  4. Place tomatoes in a separate bowl with mini caps, oregano and 1 tablespoon olive oil. Season with salt and pepper and toss to coat. Add to chargrill plate with radicchio and cook, turning occasionally, for about 2-3 minutes, or until charred. Remove.
  5. Combine lamb, thyme, wattleseed and remaining oil in a bowl. Season with salt and pepper and toss to coat.
  6. Add lamb to chargrill plate and cook for about 2 minutes on each side, or until cooked to your liking. Remove and rest 2 minutes. Thickly slice.
  7. To serve, arrange lamb and radicchio wedges on a serving plate. Top with veggies, radicchio and torn mozzarella. Drizzle with dressing. Garnish with basil.
