- Preheat the oven to 180C. Fan forced.
- Layer 5 sheets of filo, spraying with oil between each layer.
- Free form the pastry into a circular shape, leaving the sides high and rustic.
- Place the raspberries, cornflour, caster sugar and lemon zest in a bowl and stir to coat.
- Pile the raspberry mixture into the centre of the galette. Spray the pastry edges and place in the oven to bake for 15-18 minutes or until golden.
- Place the galette on a serving board, grate over lemon zest, dust with icing sugar and serve with vanilla ice cream.
