The 74-year-old grandmother started working at the chain in 1978 as a cleaner at the East Reach branch to help out a friend.
She has now done most of the multiple jobs one can do at KFC.
Pauline told BBC that her favourite food from KFC was a Zinger burger and the mashed potato and gravy.
Pauline, also known as Mrs Chicken by local fans, told The Sun that she has served and sold more than six million drumsticks and several million worth of chicken wings at KFC.
"I started with a friend of mine called Roz - who worked at East Reach in the old KFC.
"She was a bit nervous about going into the old building because it was creepy. Roz asked the then-general manager, Mr Walker if it was OK for me to come into the store and work with her. He agreed.
"I worked for a few months with Roz and when she decided to work on the front serving customers with her sister, Rose, I did the cleaning temporarily."
She even got her daughter and grandson jobs at the same branch.
Pauline also said that she hasn’t had to buy a drink in the pub for two years due to her local celebrity status.
She also has no plans to retire any time soon, explaining that it “depends on what my body says.”
"I have been lucky I keep well. I haven’t had much illness in my life,” she said.
In a previous interview, Pauline said the kids would call her ‘Miss KFC’, ‘Mum’ or ‘Nan’.
“Even on a Friday and Saturday night here, you get customers, and some young boys start singing my name out and they are pleased to see me.
“When I'm not in, they (the customers) are asking where I am. If I've been out, I get people asking why I'm not working tonight.”
The previous title holder was American employee Lorena Neely, who worked for KFC between 1976 and 2023.
