"I'm the manager of a wine company based in the Hunter Valley. My food ambition is to have a little wine bar, to just marry my love of great wine and great food."

His most memorable dish was his Porterhouse with Potato Gallette, Mushrooms, Asparagus and Bearnaise Sauce.
