- Thread pineapple onto soaked skewers.
- Heat a chargrill pan over high heat. Add pineapple. Cook, turning occasionally, for about 6-8 minutes, or until charred and caramelised. Remove.
- Meanwhile, to make lime and chilli salt, combine all ingredients in a bowl.
- Serve pineapple with salt, ice-cream and lime wedges.
