- To make patties, combine all ingredients in a bowl. Mix well. Roll and shape heaped tablespoons of mixture into patties (makes 8).
- Heat oil in a medium frying pan over a medium-high heat. Add patties. Cook for about 2-3 minutes on each side, or until cooked through. Remove.
- Meanwhile, combine vinegar and sugar in a small saucepan. Season with salt. Stir over low heat until sugar is dissolved. Transfer to a bowl. Add cucumber and toss to coat. Stand 2-3 minutes, then drain.
- To assemble, spread butter over one side of cut bread. Spread remaining side with hoisin sauce. Fill roll with lettuce, carrot, cucumber coriander and patties. Top with chilli (optional).
