- Pour vegetable oil into a frying pan and heat to 180C or hot enough to deep-fry.
- Place the prawn meat into a small blender, add the spinach and coriander, blend to a paste consistency.
- Cut six 6cm circles from the pita bread. Spoon a heaped tablespoon of the prawn mixture on top of each pita round.
- Combine the breadcrumbs and coconut in a small bowl. Dip the prawn side into the crumbs to coat.
- Place the prawn toasts into the oil, prawn side first, cook for 2-3 minutes each side or until golden and cooked through.
- Combine mayonnaise, tabasco, and chili flakes into a small serving dish.
- Plate the prawn toasts with the dipping sauce to the side to serve.
