Crumbed Haloumi with Salsa Verde

  1. Place the herb leaves into a small blender, add the red onion, capers and anchovies, blitz to finely chop. Transfer to a bowl, add the vinegar and olive oil. Mix well to combine.  
  2. Pour the oil into a small frying pan over a medium -high heat.  
  3. Place the Haloumi in the flour to coat, then egg, then breadcrumbs. Place in the frying pan and cook for 1-2 minutes each side or until golden.  
  4. Place the sliced tomato on a serving plate, top with the crumbed Haloumi and spoon over the Salsa Verde to serve.
