- Heat oil in a medium frying pan over high heat. Add onion, cook until softened. Add chicken, stir-fry for 3–4 minutes, or until browned and cooked through. Add garlic, mushrooms, water chestnuts, bamboo shoots and cook, stirring.
- Add oyster sauce, dark soy and sesame oil and cook until sauce slightly thickens.
- Remove from heat, stir through noodles, spring onion and coriander.
- Divide mixture between lettuce cups and serve.
Camping Tip: use a San Choy Bow ready sauce from supermarket for an even quicker meal.
