- Preheat the grill to high.
- Split hot cross buns in half through horizontally. Place, cut-side, up on a large oven tray. Grill for 3 minutes, or until buns are lightly toasted. Remove from the oven.
- Brush top of buns with the warm honey. Spoon ice-cream onto bun bases and top with berries. Replace with tops and serve immediately.
