  • Place the vermicelli noodles into a heatproof bowl
  • Cover with boiling water and let set for 4 minutes or until soft.
  • Strain and rinse noodles under cold water to avoid them sticking together
  • Chop the noodles with scissors into small pieces
  • Fill a large bowl with warm water and working 1 at a time, dip rice paper into the water for about 30 seconds or until soft and translucent
  • Lay rice paper onto clean, damp tea towel
  • Place roast chicken, noodles, cucumber, carrot, bean sprouts and herbs along the centre of the rice paper
  • Fold in ends and roll up to seal
  • For the dipping sauce, combine all ingredients in a bowl and stir
