Whisk yolks and 50 g of sugar until light and fluffy. Whip the egg whites with remaining sugar until stiff peaks form then add a pinch of salt. Soften the mascarpone with a spoon and then Fold the whites and mascarpone together. Fold yolk cream to make a thick, velvety cream.
