- Fill a pot with water, add some salt and bring to a rolling boil. Fill a steamerwith water and place over medium heat. Add pumpkin and carrot to steamer,cook for 8 minutes and set aside.
- Place the tomatoes into a bowl and break them up roughly with a potatomasher. Grab a non-stick frying pan and place over medium heat. Heat someolive oil then add the garlic cloves, cooking until slightly colored. Add thetomatoes and sugar and season with salt and cracked black pepper. Simmerfor 10 minutes.
- For the little-ones , remove ¼ of the sauce and place in a mixing bowl. Add thepumpkin and carrot then blitz with a hand blender. Cover.
- Cook the pasta until al dente, then drain (saving a couple of tablespoons of thestarchy pasta water). Add the little-ones’ pasta portions to the mixing bowlwith the pumpkin and carrot sauce. Stir well and allow to cool.
- For the grown-ups, add the pasta water to the grown-ups’ sauce in the pan andstir well. Remove from heat and add the basil, lemon juice. Season with seasalt and cracked black pepper and stir the mozzarella through the pasta.
- To serve the pasta, plate the spaghetti and add a dollop of ricotta to the grownups plates and a generous amount of Parmesan to all. Serve with a rocket or spinach salad.
