Tomato and Grapefruit Carpaccio

  1. Finely grated lemon zest, to garnish
  2. Peel grapefruit and orange. Thinly slice into rounds.
  3. To assemble, arrange grapefruit, orange and tomato on a plate, slightly overlapping. Scatter with pine nuts, chilli and karkalla, if using. Top with finger lime pearls, if using. Scatter with herbs. Drizzle with combined orange juice and olive oil. Garnish with lemon zest.
