Rocket Salad with Parmesan Tuile

  1. Preheat oven to 220C (fan-forced).
  2. Scatter grated cheese on an oven tray lined with baking paper. Bake for about 5 minutes, or until melted and golden brown. Remove. Stand 3 minutes.
  3. Meanwhile, to make dressing, combine all ingredients in a jug. Whisk well.
  4. Combine rocket, capsicum, radish and herbs in a bowl. Add dressing. Toss to coat.
  5. Transfer salad to a serving bowl. Top with parmesan tuile.
