Lemon and Oregano Roasted Potatoes

  1. Preheat oven to 220C (fan-forced).
  2. Place potatoes in a large microwave-safe bowl with 1 tablespoon water. Cover with plastic wrap.
  3. Microwave on High (100%) for about 5-6 minutes, or until just tender. Transfer to an oiled oven tray.
  4. Peel lemon skin with a vegetable peeler, then cut lemon in half. Add to potatoes with oregano. Drizzle with olive oil and season with salt and pepper.
  5. Cook in oven for about 15-18 minutes or until golden brown and tender. Remove.
  6. Transfer to a serving bowl.
