Wagyu Steak with Tomato Salsa

  • Preheat oven to 200C (fan-forced).
  • Using a mandolin, thinly slice potatoes. Toss with butter, herbs and paprika. Season with salt and pepper. Layer in a two greased dariole moulds (6cm x 5.5cm) adding a small dollop of yoghurt every couple of layers.
  • Cook in oven for about 15 minutes, or until potatoes are tender. Remove from oven and invert onto serving plates.
  • Meanwhile, season steak with salt and pepper. Drizzle with oil.
  • Heat a chargrill pan over high heat. Add steak. Cook for about 4-5 minutes. Turn over. Cook for a further 1-2 minutes, or until cooked to your liking. Remove. Rest for 5 minutes. Thickly slice.
  • To make salsa, combine all ingredients in a bowl and season with salt and pepper.
  • Serve steak with potato stack. Spoon over salsa.
