Crispy Salmon with Rice Noodles

- To make dressing, combine all ingredients in a jug.
- To make spiced oil, toast seeds in a small frying pan for 30 seconds until fragrant. Stir in oil and paprika. Remove from heat.
- Heat oil in a medium non-stick frypan over medium-high heat. Add salmon, skin-side down. Cook for about 4 minutes, or until skin is crisp. Turn over and cook for a further 2 minutes, or until salmon is cooked to your liking. Remove.
- Meanwhile, cook noodles according in a large saucepan of boiling water until tender. Drain. Rinse under water, drain well and transfer to a bowl. Add dressing and toss to coat.
- Serve salmon with noodles. Drizzle with spiced oil. Garnish with mint and dill.
