Fig Tart

  • Preheat oven to 180C (fan-forced). Grease two 10cm loose-based tart tins (base measures 8cm).  
  • Cut out two 11cm rounds from pastry sheet. Line prepared tart tins with pastry, trimming excess.
  • To make filling, whisk butter, brown sugar and vanilla in a bowl until smooth. Stir in almond meal and egg yolk. Spoon into tart shells.
  • Cook in oven for about 15 minutes, or until pastry is golden brown and filling is set. Add mozzarella. Cook for a further 1 minute, or until cheese is melted. Remove.
  • Meanwhile, heat a small frying pan over medium-high heat. Dip cut-side of fig into caster sugar. Add to hot pan. Cook for about 30 seconds, or until figs are caramelised. Remove.
  • To serve, top tart with fig. Drizzle with honey and balsamic vinegar. Sprinkle with orange zest. Serve with ice-cream.
