Zucchini and Cheddar Frittata

- Grate the zucchini into a bowl. Season with salt. Allow to sit for a few minutes then squeeze with hands to drain of all moisture.
- Heat an oiled frying pan over a medium heat, add the zucchini and cook for 3-5 minutes stirring occasionally. Add the thyme and parsley.
- Crack the eggs into a bowl, add the milk and basil, whisk with a fork.
- Heat an oiled frying pan over a medium heat. Add the eggs over the base of the pan and allow to cook for 1-2 minutes. Sprinkle over the zucchini and cheese. Season. Cook a further minute then fold in half.
- Slide onto a plate to serve.
