- Preheat the oven to 180C. Fan forced.
- Place the breadcrumbs on an oven tray, drizzle with olive oil and season with salt, place in the oven for 8-10 minutes or until golden and crispy.
- Slice the pork and place in a bowl. Add the flour and season with salt and pepper. Coat.
- Peel one mandarin and segment, remove the pith.
- Zest the remaining two mandarins, then juice, ¼ cup of juice.
- Heat a frying pan over a high heat, drizzle with vegetable oil, add the gai Lang and toss to wilt. Add sesame oil and soy sauce. Remove from pan and place on a serving plate.
- Place pan back over a high heat, add the pork, cook for 2-4 minutes to brown all over, add the mandarin juice and white wine. Simmer for 2-4 minutes or until cooked. Add mandarin segments.
- Spoon onto the Gai Lang to serve. Sprinkle with toasted breadcrumbs.
