  • Preheat the oven to 180C. Fan forced.
  • Place the breadcrumbs on an oven tray, drizzle with olive oil and season with salt, place in the oven for 8-10 minutes or until golden and crispy.
  • Slice the pork and place in a bowl. Add the flour and season with salt and pepper. Coat.
  • Peel one mandarin and segment, remove the pith.
  • Zest the remaining two mandarins, then juice, ¼ cup of juice.
  • Heat a frying pan over a high heat, drizzle with vegetable oil, add the gai Lang and toss to wilt. Add sesame oil and soy sauce. Remove from pan and place on a serving plate.
  • Place pan back over a high heat, add the pork, cook for 2-4 minutes to brown all over, add the mandarin juice and white wine. Simmer for 2-4 minutes or until cooked. Add mandarin segments.
  • Spoon onto the Gai Lang to serve. Sprinkle with toasted breadcrumbs.
