Steps

  1. Cook pasta in a saucepan of boiling, salted water until tender. Reserve ¼ cup pasta water. Drain.
  2. Transfer pasta in a large bowl with pecorino, butter, lemon juice and pasta water. Toss to coat. Season with salt and freshly ground peppercorns, to taste.
  3. Serve pasta in a bowl. Sprinkle with extra finely grated pecorino. Finely grate truffle over top.
  4. TIP Coloured linguine can be replaced with other types of long-shaped pasta of your choice i.e. spaghetti, fettuccine or angel hair.
