  1. Heat an oiled frying pan over a medium heat, add the chicken mince, use the back of a wooden spoon to break it up.
  2. Add the chili, soy, fish sauce, ketchup Manis and herbs, cook for 6-8 minutes.
  3. Stir through the peanuts.
  4. Heat an oiled frying pan and fry the egg for 2 minutes.
  5. Pour the rice into a serving bowl, add the mince and top with the egg, scatter with basil leaves to serve.
