Charred Asparagus and Haloumi Salad with Grapefruit

  1. Heat a chargrill pan over medium-high heat. Add asparagus and drizzle with 1 tablespoon olive oil. Season with salt and pepper. Cook, turning occasionally, for about 3-4 minutes, or until charred. Remove and coarsely chop.
  2. Drizzle haloumi with 1 tablespoon olive oil. Add haloumi to pan. Cook, turning occasionally, for about 2-3 minutes, or until charred. Remove and coarsely chop.
  3. Peel grapefruit and cut into segments. Coarsely chop.
  4. Combine asparagus, haloumi, grapefruit tomato and pistachios in a bowl. Drizzle with remaining oil and season with salt and pepper. Toss to coat. Add herbs and toss to combine.
  5. Place salad in a serving bowl. Garnish with lemon zest.
