  • Carefully crack a whole egg into the canister of a stick blender. Add mustard and a pinch of salt.
  • Slowly pour in the oil. Place blade cage of the stick blender over the egg yolk and blend until creamy and starting to thicken. While blending, slowly draw the stick blender up through the ingredients, until emulsified and thick. Add lemon juice and season with salt to taste.
