- Preheat oven to 180C. Preheat deep fryer to 180C.
- To make the salsa, place the tinned tomatoes, garlic, red onion, chilli, HP, and sugar in a bowl and stir to combine. Season with salt and smoked paprika and set aside.
- To make the mayonnaise, place the eggs, vinegar and Dijon mustard in a food processor and process to combine. With processor running, slowly add grape seed oil until mixture is thick and smooth. Season to taste with salt and smoked paprika. Set aside.
- To make the slaw, place red cabbage, green cabbage and lettuce in a bowl and toss to combine. Add half of reserved mayonnaise and stir to coat. Set aside.
- Lay the bacon rashers on a rack set over a baking tray. Drizzle with maple syrup and place in the oven to bake until crisp, about 15 minutes. Remove from oven, cut into strips and set aside.
- Prepare 4 bowls for the chicken, in the first place ¼ cup flour, 1 teaspoon salt, 1 teaspoon cayenne pepper and 1 teaspoon white pepper and stir to combine. In the 2nd bowl place buttermilk and 1 teaspoon sweet paprika and stir to combine. In the 3rd bowl place ½ cup flour, ½ teaspoon salt, 1 teaspoon garlic salt and ½ teaspoon smoked paprika and stir to combine. In the 4th bowl place ¼ teaspoon cayenne pepper, ¼ teaspoon smoked paprika, ¼ teaspoon garlic salt, ¼ teaspoon sweet paprika and ¼ teaspoon white pepper and stir to combine. Dip chicken strips in first 3 bowls, stirring to coat in each bowl. Place chicken in deep fryer and cook until golden, about 5 minutes. Remove from oil and place on paper towel. Sprinkle with spice mix from 4th bowl and set aside.
- Place 60 grams flour, corn flour, bi-carb soda and sparkling water in a bowl and stir to combine. Add onion rings and toss to coat. Place onion rings in deep fryer and cook until golden, about 3 minutes. Remove from oil and set aside on paper towel.
- To serve, place flat grill on high heat. Add wraps to heat. Fill wrap with salsa, slaw, fried chicken and maple bacon and fold closed. Place filled wraps on grill, opening side down, for one minute. Serve with onion rings and extra mayonnaise.
