Chocolate Self-Saucing Puddings

  • COMBINE the milk, butter, egg and vanilla. Sift together the flour, caster sugar, cocoa and baking powder. Pour in the milk mixture and stir to combine. Spoon into 4 greased 200ml ramekins. Sprinkle each with a little combined brown sugar and extra cocoa, and then pour 1/4 cup boiling water into each.
  • BAKE in a moderately hot oven 190°C for 20-30 minutes. Stand for 5 minutes before serving, dusted with icing sugar.
