Beef Burger with Jalapeno Jam, Lemon Mayo and Truffle Salt Onion Rings

  • Pre heat oven at 200C and heat oil in deep fryer to 180C.
  • For the Jalapeno Jam, place all ingredients and ¼ cup water in a saucepan and set over medium heat. Bring to a boil then reduce heat and allow to simmer gently until the mixture forms a jam consistency, about 1 hour. Remove from heat and set aside until serving.
  • For the Lemon Mayonnaise, place egg, egg yolk, mustard, lemon juice and zest in a cylinder of a stick blender and process until thickened. While blending, add grapeseed oil in a thin steady stream and process until thickened and emulsified. Slowly add olive oil, blending until combined. Season and set aside, in fridge, until serving.
  • For the Beef and Speck Burgers, pass beef and speck through a meat mincer, mix well and place in fridge to chill.
  • Place olive oil and thyme in a saucepan and set over medium heat. Add onion and fry until caramelised. Place in freezer to cool.
  • Place chilled mince, cooled onion, egg and breadcrumbs in a bowl. Season generously and mix by hand until mixture binds together well. Mould into 4 patties and place in the fridge to set for about 20-25 minutes.
  • Heat an ovenproof grill pan on a high heat. Add patties and cook until a brown crust forms, about 2 minutes on each side. Remove from heat.
  • Place a cheese slice on top of each patty then place in oven until cooked through, about 3-4 minutes. Remove from oven and set aside to rest for 10 minutes.
  • For the Onion Rings, slice onion into 1cm slices and separate into rings.
  • Place flour, egg, beer, salt and pepper in a bowl and whisk to form a thin batter.
  • Lightly dust onion rings, in batches, in flour then into dip into the beer batter. Immediately place into the hot oil and fry until golden brown, about 3 minutes. Remove from oil and place on paper towel to drain excess oil. Season with truffle salt and pepper and set aside until serving.
  • To serve, cut brioche buns in half and toast the cut sides lightly. Spoon Lemon Mayonnaise onto the base of the buns then add lettuce, a Beef and Speck Patty then a little more Lemon Mayonnaise. Finish with some Jalapeno Jam and top with bun tops. Serve with Onion Rings and remaining Lemon Mayonnaise on the side
